Cannonball Curds are a fresh cheddar curd. Fresh cheese curds are generally unavailable unless you’re REALLY close to the dairy, so we brought the dairy to yinz! They’re salty, a little tart, and have a great chewy texture. Because Cannonball Curds come nugget-shaped, they do very well deep fried, stirred into soups or used in baked goods. But, they are excellent fresh as well.

Herb & Bourbon is the newest creation here at Arsenal Cheese. We drain fresh curd in molds, then allow them to settle into little rounds. The rounds are salted, and washed in bourbon that’s full of thyme and tarragon. These bourbon-soaked herbs are then rubbed onto the cheese. Aged about a week and a half, this new product is available, but we’re always tweaking it.

Update 2/7/12 – Herb & Bourbon will be unavailable for a while due to big demand for Cannonball Curds. Sorry!
